Rempeyek

Yummy crispy snack with peanut and anchovies.

Ingredients:

130g Rice Flour

1 tsp Sweet Cumin (Jintan Manis) - lightly crushed

1 tsp Cumin (Jintan Putih) - lightly crushed

1/2 tsp Anchovies Powder

1/2 Beaten Egg

1/4 tsp Salt

1/2 tsp Garlic Powder

Pinch of Five Spices Powder

65-70ml Water

100ml Coconut Milk


Toppings:

Anchovies (clean & dried)

Groundnuts


Oil for frying

You will need a rempeyek mould

Method:

1. Mix all the ingredients together and stir well till well combine.

2. Heat up oil in wok.

3. Dip mould into hot oil for 3 mins to heat up.

4. Quickly spoon a tablespoon batter into mould and swirl to coat the sides as well. Place some peanuts and anchovies on the surface of batter. Return to hot oil.

5. Gently shake abit and the batter will loosen and separates from the mould. Fry will both sides turn golden.

6. Drain away excess oil and let it cool down. Store in airtight container.
