Simple agar-agar dessert. Just need some effort to present it in a different way.
Ingredients : (makes 1 round mould)
(A) Blend together
100ml Water
2 pcs Pandan Leaves
(B)
200ml Water
30g Sugar
1 tsp Agar Agar Powder
1 tsp Instant Jelly Powder
(C)
60ml Coconut Milk
240ml Water
30g Sugar
1 tsp Agar Agar Powder
1 tsp Instant Jelly Powder
*You will need 2 separate boiler and pot to make this.
You need need to be patient while doing this as you need to wait for each layer to set before pouring in the next layer. 'Set' means it slightly hardens while forming a thin solid layer. Not necessary to harden it.
Most important tips is to check your table or surface that you are putting the mould, make sure on a the flat and even surface without any slopes (level). Otherwise, your jelly will not turn out nicely.
NOTE : If you don't want to keep boiling the 2 pots while waiting time, or worry the mixture harden too fast if you turn off the heat, then you can pour mixture into 2 separate stainless steel mugs and let it sit in the bigger pot/wok of hot water under low heat. (double boil method)
Step by Step : 1. Blend (A) together. Filter pandan residue & set aside the juice. 2. Combine everything in (B) in a pot. Whisk to dilute into water & make sure no small clumps from agar powder. 3. Bring to a boil and until fully dissolves. Stirring occasionally. Reduce heat to lowest to keep warm.
4. Scoop out 150ml of pandan jelly mixture & pour into mould. Let it harden. 5. While waiting 1st layer to harden, boil (C). Combine water, sugar, agar powder & jelly powder in another pot, EXCEPT coconut milk.
6. Bring to a boil and until fully dissolves. Stirring occasionally. Reduce heat & add in coconut milk. Cook for about 1 min & remove but keep warm. (high heat will cause coconut milk become curdy)
7. By now the pandan layer should be harden. Use a knife to cut them into chunks. Then use a spoon to stir abit so that it doesn't stick to the base of the mould.
8. Now scoop out 150ml of coconut milk jelly mixture. (Do filter if you see any curds floating in the mixture). Pour into the same mould with pandan jelly chunks. Let it harden.
9. Then pour in balance of 150ml pandan jelly mixture. Let it harden.
10. Finally pour in the balance 150ml of coconut milk jelly mixture. Do filter if you see any curds floating in the mixture.
11. Let jelly cool down at room temperature before putting into the fridge to set. Serve chilled.
