Butter cookies with a hint of orange. It reminds me of those childhood days, whenever my mum made butter cookies, she will grate some orange zest and add them into the cookie dough. And it's yummylicious.. It tasted so great ever..
The white pith of the orange is bitter and unpleasant, while the zest has the bright flavor of the fruit. But whether a recipe calls for grated lemon (or orange or lime) zest, peel or rind, you won't want to use that unpleasant white pith. Just slowly and carefully grate only the bright zest. It contains the oil that gives the rich aroma to your cookies.
Ingredients : 110g Superfine Flour (sieved)
25g Potato Flour
85g Unsalted Butter 60g Sugar 1pc Egg Yolk
1/2 tsp Grated Orange Rind Pinch of Salt
Few drops Vanilla Essence
Step by Step: 1. Preheat oven at 160C. (Note to self: I only use 150C) 2. Cream butter till smooth. 3. Add sugar & salt, continue till well blended & butter turn pale in color. 4. Add in egg yolk, orange rind and vanilla essence and mix till well blended. 5. Gradually add in sifted flour & potato flour and mix till incorporated. 6. Piped cookie dough out into desired shapes and placed them on baking tray lined with parchment paper.
7. Bake in preheated oven for 15 mins, using fan mode lowest rack. 8. Remove tray from the oven & let cookies cool down on baking sheet for 5 mins before transferring to cooling rack. Alternatively, if you are not using the same tray again, you can just let it cool down entirely on the baking tray. 9. Store in air tight containers.
