Baked Purple Sweet Potatoes Fries

Simple healthy snack - made with locally grown sweet potatoes. Potatoes fries, one of the world’s most popular sides, loved by all. 

These oven-baked purple sweet potato fries are as tasty as they are beautiful. It's natural deep vibrant purple color make these a stand-out and the crispy exterior with soft middle made these such an addictive snack.

Mine were just lightly salted. Of course you can  always topped with a homemade seasoning mix for a healthy version such as curry powder, garlic powder, cheese powder, etc. 

Ingredients:

1 medium Purple sweet potatoes

About 2 tsp Olive oil

About 2-3 pinches of Salt

Step by Step:

1. Preheat oven to 225C. (Note to self : my oven temp too hot, can reduce to 200C next time) 

2. Wash potatoes & remove skin. Then wipe dry potato (before cutting into strips). Make sure cutting board and knife is dry. 

3. Cut potatoes into thin long strips. (thickness slightly thicker than 'Mcd' french fries)

4. In a small bowl or plate, drizzle olive oil and salt over cut potatoes. Use a fork or your hand to mix them, being sure they are all well coated on every pieces and every sides. 

5. Arrange them on non stick baking sheet and spread them out. Move around the potatoes until they are in a single layer, and sprinkle with a bit of salt.

6. Place baking tray in the oven and roast for 12 to 20 minutes (depending on your potato sticks thickness and different oven brand temperature varies). I am placing the tray at the lowest rack, using top & bottom heat. 

-- they should be sizzling and browning a bit on the bottoms. 

7. Let them cool on the baking sheet and then serve as a side or snack.
