Just simple Coconut milk Jelly mooncakes, but with a colorful goldfish appearance.
You will need :
~ toothpick
~ tiny straw (packet drink/Vitagen)
~ stirrer with tiny spoon (eg :mcdonalds' stirrer)
~ 4 in 1 Jelly mooncake mould (capacity of 125ml each)
To measure, pour in water into one of the mooncake mould, then pour out into measurement cup to measure. Then times 4 to get the total liquid in ml that you need to fill up all four.
Ingredients : makes 4 pcs
100ml Coconut Milk
480ml Water
60g Sugar
2 tsp Agar-agar Powder
2 tsp Instant Jelly Powder
1 pc Pandan leaves
Food colouring - Black, yellow, red, green, blue
Step by Step:
1. Combine sugar, agar-agar powder & instant jelly powder in a bowl. Stir to mix evenly.
2. Fill up pot with water, then pour in mixture in no. 1. Stir to mix till no big clump. Throw in pandan leaves.
3. Now, turn on the heat & bring to a boil. Then lower the heat and add in coconut milk.
4. Stir continuously until mixture bubblling, turn to lowest heat & keep them warm.
(If it gets too hot, you may opt to turn off the heat for 5 mins, then on the heat again for 2 mins, and repeat the same. This can also prevent the liquid from drying up)
5. Now, get ready to assemble the jelly mooncake.
Instructions to pour in mixture:
Before pouring the jelly mixture into the mould, slightly wet the mould. This is to prevent the mooncake jelly from sticking to the mould and easy removal. It's okay to have some water drops in the mould.
TIPS : have to fill up fast before the jelly hardens in the bowl.
TIPS : for over spilling, just let it harden and pick up using a toothpick.
1. For the eyes - scoop 1 tbsp jelly mixture into bowl. Mix 1-2 drops black colouring & stir evenly. Fill up the fish eyes areas. You can use small straw or mcdonalds stirrer with a tiny spoon to fill in the small areas.
2. For the fish scales - scoop 1 tbsp jelly mixture into bowl. Mix 1-2 drops red colouring & stir evenly. Fill up the fish scales (just abit as scales, not entire body) & tails areas.
3. For the body, - scoop 1 tbsp jelly mixture into bowl. Mix 1-2 drops yellow/egg yolk yellow colouring & stir evenly. Fill up the fish body areas.
(do not worry of the contrast color of red and yellow on the body, by the time the jelly hardens, the color will mix in and combine becoming orange color)
4. Lastly for background, mix the desired color (pink/blue) in the balance of mixture, then slowly pour in. Do not pour directly on the fish. Pour to the sides instead.
Once done, leave at room temperature to cool down. Then transfer to fridge to chill till set.
