Sharing another butter cookies but in cocoa flavour, that my son loves it so much.
(Note that these are not melt-in-mouth types of cookies. I love this with the fact that they are firm enough to hold by my son and the crumbs don’t drop everywhere)
The cookies are more compact especially you are using a cookie stamp as compared to cookie cutter. As you press down to stamp the design pattern, the action actually press down the dough & hence compacted it.
But overall still a good cookie especially to go with your coffee. I began to love this hard cookies.
Ingredients :
100g All Purpose Flour / superfine flour (sieved)
5g Cocoa powder
50g Butter
40g Icing Sugar
1pc Egg Yolk ( B size)
1 drop Vanilla essence
Pinch of Salt
Step by Step:
1. Preheat oven at 160C.
2. Cream butter till smooth.
3. Add sugar & salt, continue till well blended & butter turn pale in color.
4. Add in egg yolk and mix till well blended.
5. Gradually add in sifted flour & cocoa powder and mix till incorporated.
6. Roll cookie dough thinly & use cookie cutter to cut out the cookie. Place them on baking paper.
7. Bake in preheated oven for 15 mins, using top & bottom heat at lowest rack.
8. Remove tray from the oven & let cookies cool down on baking sheet for 5 mins before transferring to cooling rack. Store in air tight containers.
