Chocolate Pudding

Easy and simple dessert for chocolate lovers. Rich, creamy and smooth velvety chocolate flavor pudding.

(Recipe adapted from Anncoo Journal : https://www.anncoojournal.com/chocolate-jelly-pudding/ ) I tweaked the original recipe with less amount of sugar as I'm using normal sweetness dark chocolate bar)


Ingredients : (20 x 8.5 x 4.5cm (H) mould )

75g Dark Chocolate Bar

20g Sugar

500ml Fresh Milk

3/4 tsp Agar-Agar Powder

15g Cocoa Powder

1 tbsp Gelatin Powder

1/4 tsp Vanilla Extract


Method:

1. Melt dark chocolate under double boiler till smooth, set aside. (No water inside bowl, otherwise chocolate doesn't melt properly)

2. Soak gelatin with 1.5 tablespoons of water and set aside.

3. Mix a few tablespoons of milk together with cocoa powder and stir to mix well.

4. Pour remaining milk into pot together with sugar, agar agar powder and cocoa mixture, stir well and add vanilla extract.

5. Boil and stir chocolate mixture at medium low heat to boil. Drop in soaked gelatin and continue to stir mixture for another 3 minutes, off heat.

6. Pour melted chocolate into liquid mixture and to stir until chocolate combined. Turn on heat again at low heat and stir mixture for another minute, off heat.

7. Then pour chocolate mixture into mould and cool down a little. Then chill in the refrigerator to fully set until ready to serve.

8. Optional : Dust some chocolate powder on top or decorate with strawberries or any fruits of your choice.

(Above) I'm placing two cups to the sides so that it doesn't bulge as silicone mould is soft.
