This easy lemon rosemary chicken recipe requires just simple ingredients! The chicken is seasoned with lemon pepper seasoning, lightly seared and then baked in a simple lemon rosemary butter sauce.

Ingredients:
650g Whole Chicken Thigh (cut into 2)
1/2 tsp Salt
Few dash of Black Pepper
1/2 tsp Lemon Zest
1 tbsp Olive Oil
Few lemon slices for garnishing
Sauce :
1 tbsp Butter
3 tbsp Lemon Juice
3 cloves Garlic (minced)
1/3 cup Chicken Broth
1 tsp Fresh Rosemary (chopped)
1/4 tsp Dried Chilli Flakes
2 tsp Maple Syrup
Method:
1. Rub chicken with salt, black pepper, lemon zest. Let it marinade for about 1 hour.

2. Preheat oven to 200ºC.
3. In a small bowl, combine all the sauce ingredients and microwave in 30-second increments until the butter melts.
4. Add 1 tbsp olive oil to an ovenproof skillet placed over medium-high heat and when it's hot, sear the chicken. Cook the chicken for 3-4 minutes per side till the skin slightly golden. If you don’t have an ovenproof skillet, transfer the chicken to a baking dish/tray.

5. Pour the prepared sauce over the chicken. Bake for 20-30 minutes or until chicken fully cooked. (timing depends on size and thickness of the chicken meat). If chicken breast meat only, 13-17 mins will do.

6. Garnish with lemon slices and fresh rosemary. Ready to serve.
