It was mango season lately and I bought a few Waterlily Mangoes. Some were nicely ripen but some were not fully ripe and still hard when I tried to cut it. So I decided to turn them into a dish - Kerabu Mango. (mango salad)

Ingredients :
1 whole Raw Mango
30g Anchovies (do no wash)
3 tbsp Peanuts (do not wash)
2 tbsp Oil for frying
Sauce:
2 pc Limau Kasturi - squeeze the juice
1 pc Chilli Padi (or more if prefer more spicy)
3 tsp Fish Sauce
4 tbsp Hot Water
3 tsp Sugar
Step by step :
1. Mix the sauce in a bowl. Stir well till sugar melts. Set aside to cool down.
2. Using medium heat, heat up pan with peanuts. Stirring continuously, pan fry them without any oil for about 3 mins. Then add few drops of oil into it. Keep stirring till peanuts turn brownish. Remove & set aside.
3. Now, heat up oil in pan and pan fry anchovies till crispy & golden brown. Remove & set aside.
4. Julienne mango and put in a big bowl. Discard seed.
5. Pour in the sauce that we had premix earlier. Use a fork to mix till well combined and let it marinate for about 5 mins.
6. Dish up and garnish with more chillies, crispy anchovies and peanuts.
