Old Coconut Black Chicken Soup


Simply nutritious soup to warm the stomach.

It is good for strengthening the lungs and nourishes the Qi.

Can taste a very strong coconut when you drink the soup.

I got the old coconut from the fresh market for RM1.20 only. Asked the seller to help me to break them open into halves. (without coconut water)

Ingredients : (serves 2-3)

1/2 bird Black Chicken (skin removed)

3-4 pcs Chicken Feet

1/2 Old Coconut (discard juice inside)

1 tbsp Wolfberries

6pcs Red Dates (medium size) - cored

8 pcs Yuk Chuk

1-2 sticks Thong Sum

1L Water

Salt to taste

* I stored the other half of the coconut flesh in the freezer for future use. If you are boiling a bigger portion, then you may use more.

Step by Step:

1. Scrape the coconut flesh with a scraper or hammer the coconut shell till it breaks into pieces, then you can easily remove the thick flesh. Give a rinse to remove any tiny husk residue. Then cut into small pieces.

** Be careful if you are using a knife to dig out the flesh as the flesh is really tough & might break your knife. Using a screwdriver will be a better alternate option.

You may cut away the brown inner husk once the flesh comes out. I find it too tedious even using a peeler doesn't really helps. So I just use the back of the knife to lightly scrape away the thin layer of brownish inner husk & rinse it away. Then just cut the flesh into small pieces. Anyway, we are not going to eat the hard coconut flesh.

I got this coconut scraper from a shop in Thailand, Chatuchak Market selling all kinds of kitchenware stuffs. Quite useful.

2. Fill pot with water and add in all the other ingredients.

3. Bring to a boil & reduce to lowest heat and let it simmer for 2 hrs.

4. Season with salt & serve hot.
