Stirfry Curry Pork with Lemongrass


Meal for one has to be quick and easy nowadays. Home-cooked food that's simple enough to get it done within 30 mins.

Ingredients : (serves 1)

110g Pork Muscle (sliced thinly)

1 Lemongrass (sliced thinly the white parts) green part can cut into 2-3cm lengthwise

2 sprigs Curry Leaves

1 Shallots (cut into wedges)

1/2 tbsp Curry Powder

1/2 tbsp Light Soy Sauce

1/2 tsp Fish Sauce

Pinch of Sugar

25-30ml Water

1 tbsp Cooking Oil

Marinade:

1/2 tbsp Light Soy Sauce

1/2 tsp Cornstarch

1/2 tsp Sugar

Dash of Pepper

Pinch of Salt

Step by Step:

1. Marinate the pork slices and set aside for about 30 mins.

2. Heat up oil in the pan. Saute lemongrass, shallots and curry leaves for about 1 mins till fragrant.

3. Add in marinated pork slices and curry powder. Stir to mix well.

4. Add in water. Season with light soy sauce, fish sauce & sugar. Mix and stir to combine.

5. Allow to simmer for about 1-2 mins till the gravy slightly thickens.

6. Dish up & serve hot with steamed rice.

** Hubby commented that the lemongrass slices is a bit hard to chew & kinda irritating whenever biting at them, too hard. Suggest to just smashed the head of the lemongrass, then cut into 2-3cm lengthwise.
