Potatoes with Shabu-Shabu Pork

Shabu-Shabu Pork is thinly sliced pork belly, non-marinated. Usually will eat during Shabu-Shabu or steamboat. Not to be mistaken as pork bacon, as those were salty. Try this simple combination.

Ingredients : (serves 2)

220g Potatoes (about 2pc medium size)

100g Shabu-Shabu Pork (cut into 2)

2 cloves Garlic - minced

200ml Water

1 tbsp Oyster Sauce

1 tbsp Light Soy Sauce

1 tsp Sugar

2 tbsp Cooking Oil

Marinate:

1/2 tsp Shao Xing Wine

1/2 tsp Light Soy Sauce

Dash of Pepper

Pinch of Salt

Pinch of Sugar

Step by Step:

1. Marinate shabu-shabu pork with above marinate ingredients. Set aside for 30 mins.

2. Cut potatoes into thin slices.

3. Heat up wok/pan with some oil.

4. Separate the shabu-shabu slices and put them into the wok/pan. Add in minced garlic as well.

5. Let it pan fry for a minute before flipping them. Stir to let it cook for another 30 seconds. Dish up & remove them from wok/pan. Set aside.

6. With the leftover oil in the same wok/pan, add in sliced potatoes and let it cook for few minutes on each sides.

7. Then add in water, oyster sauce, light soy sauce and sugar.

8. Let it simmer for 10 mins or until potatoes soften. (depending on the thickness of the potatoes)

9. Add back the cooked shabu-shabu & let it simmer for another 2 mins and absorb all the flavour. (Add abit more water if your gravy is drying up and if you prefer to have more gravy)

10. Dish up & ready to serve.
