Double Boiled Bird Nest with Red Dates & Rock Sugar


This is a luxurious and nutritious Chinese delicacy dessert. Basically bird's nest is harvested from Swallow's bird nest.

Bird’s Nest contains proteins, amino acids and minerals that are essential for healthy development. It tastes sweet and neutral in nature. It nourishes the Yin, relieves dryness, nourishes the torso, tonifies Qi, moisturises the lungs, and cleanses the blood.

Bird's nest is best consumed on an empty stomach. Ideally, it should be consumed before meals to allow the body to absorb its nutrients. It is also traditionally used as a beauty food for your skin to maintain youthfulness and enhance the complexion.

Ingredients : (serves 2 rice bowls)

1 slice of Dried Bird Nest

250ml Water

2pcs Red Dated - pitted

10g Rock Sugar

Step by Step:

1. Soaked dried bird nest for about 30 mins until soften.

2. Remove any impurities such as fine feathers, black stuffs, etc if any.

3. Rinse and drain. Then transfer to a ceramic double boil jar, together with the rest of the ingredients. Cover it.

4. Place in a double boiler or pot submerged in water.

5. Choose "bird nest' setting and it will set to boil for 30 mins once water boiled.

** Do not boil bird nest for too long as it will easily melt into the soup and soup will become thick & sticky.

6. Serve the bird’s nest warm or slightly cool down to room temperature or chilled.

Note : I am using an electric double-boiler. If using other manual double boiler, put the jar into the pot. Bring the water at outer pot to a boil and reduce heat to let it simmer for 30 mins. The water in the outer pot should cover at least 3/4 of the height of the inner pot. The stewing time begins counting when the water in the outer pot starts boiling & bubbling.
