Cranberries Shortbread


Craving for some real strong flavor butter cookies. Searched and found the below recipe shared by Miki Food Archives. Since I got some dried cranberries at home, I decided to give it a try since it was quite a popular bakes during the last cny. I'm trying out just half of the recipe since it's for own consumption.

It turned out the shortbread smells buttery and taste awesome. Almost like those butter cookies that you find in those blue tins - Kjeldsens Danish Butter Cookies. Was very surprise on the first bite, never imagine combination of those few simple ingredients can make such a tasty cookies. Great for any occasions.

Ingredients: 200g Salted Butter (softened) 100g Icing Sugar 1/4 tsp Vanilla Extract 300g All Purpose Flour 40g Dried Cranberries (chopped)

Step by Step: 1. Cream butter and icing sugar. Beat in vanilla extract. Gradually beat in flour (low speed, KitchenAid speed 1) until all ingredients comes together. 2. Stir in cranberries.

3. Wrap the dough with cling wrap, shape into round or square shape depends on your own preference. Keep in the freezer for 1 hour.

4. Remove the dough from freezer, slice it and transfer to a lined baking tray.

5. Bake in a preheated oven 160'C for 15-20 minutes. Cool down properly before storing in airtight containers.
