Banana Cupcakes with Chocolate Chips


One of the way to get rid of over ripe banana. Transform them into something else for your next day breakfast or tea time snack.

Ingredients: (makes 13 medium size cupcakes)

2 Eggs

80g Castor Sugar

200g Ripe Banana (mashed coarsely with a fork)

115g Self Raising Flour

Pinch of Baking Soda

60g Corn Oil / Sunflower Oil

some chocolate chips to be sprinkle on top

Step by Step:

1. Preheat oven at 150C.

2. Sieve self raising flour & baking soda. Set aside.

3. Beat eggs, sugar & banana in a blender.

4. Pour out mixture into a bowl.

5. Fold in flour & mix well.

6. Slowly add in corn oil & mix batter till shiny & smooth.

7. Scoop mixture into paper cups till almost full.

8. Bake in preheated oven for 40 mins. (I'm using top & bottom heat, lowest rack)
