Double Boiled Peach Gum with Red Dates & Dried Longan

Made a nourishing & collagen booster desert. Peach gum 桃胶 is rich in collagen for beautiful skin & wrinkle-free, cleanses blood and clears acne and prevent urinary tract infections with regular consumption. Once cook, it's jelly-like stuff texture is soft and tasteless. It’s mouth-feel can comparable to bird's nest. Best when consume it chilled. So refreshing and yummy.

As the name tells you, Tao jiao (peach gum) is also called tao hua lei (the tears of the peach blossom), is actually resin that is secreted from the bark of the Chinese peach tree. It then hardens in crystal form looking like amber crystals. Therefore, it has irregular shapes, sizes, different color tone ranging from amber to translucent.

Since peach gum is tasteless, it's up to you to add other ingredients to pair with it.

Here, I added red dates & dried longan. Rich in vitamin C and beta carotene, lycopene, such as polyphenols, these are all very good antioxidant.

Bought mine at a morning market in Puchong (Malaysia) for RM15 (100g pack). A reference to other with similar nutritional benefits, it's more expensive than snow fungus but a cheaper version than 雪蛤 (snow jelly / hashima) or bird nest. In Singapore, there's quite a few places selling them, which normally will be TCM stores. In Malaysia, I think this is kinda new stuff as I haven't seen anyone cook this before. I noticed, not all TCM shop sells this.

Ingredients: (serves 4-5)

30g Peach Gum

8pcs Red Dates (small) - seed removed

2pcs Red Dates (Big) - seed removed

15g Dried Longan 1L Water

Rock Sugar to taste

Step by Step:

1. Soak peach gum in a bowl with 1 1/2 cup of water for overnight.

I soaked it for 16 hours. It should expand and soft to touch. By next day, the water will be mostly absorbed by the peach gum & it expands 8-10 times it's size. For bigger piece of peach gum, the center might be still abit hard, you just need to soak them a little bit longer.

2. Pick & remove the impurities (little specks of black color stuffs). Rinse till the jelly-like peach gum until it is sufficiently clean.

After the hard work of picking..

3.Rinse pitted red dates and dried longans before putting them into a pot of water and boil on stove for 30 minutes.

4. Pour the red dates extract into the double boiler pot. Add in the soaked peach gum as well.

5. Cover & double boiled for 1 hr 30 mins. Add in rock sugar during the last 15 minutes. Boiling too long will cause the peach gum to melt into the soup & you will have a pot of glue (thick soup).

6. Serve hot/ warm or chilled. I love it when it's chilled. So refreshing & yummy.
