Apple Carrot Soup


An apple a day keeps the doctor away. The natural sweetness from the apple makes the soup tastes sweet naturally too. The apples will literally disintegrate so it's suitable for elderly & kids or those with weak digestion.

If you are wondering how's the soup taste, let me describe it here. It doesn't taste sour. It doesn't taste like apple juice. It doesn't taste fruity. Actually you can barely tell it's apple soup if you didn't see what's in the pot. I feel that the taste is very similar to salted vege (kiam chai) tofu with roasted pork bone soup. I didn't add in any salt or sugar for seasoning, but it just has the combination that blends everything together, making it flavorful enough.

As I mentioned before in my previous Pumpkin Chicken Soup recipe, I love to use chicken feets in my soups. It may sounds gross & I know alot of you might be sceptical about using chicken feet. Chicken feet as it is high in collagen content & collagen is needed to keep our skin remain youthful & beautiful.

Ingredients: (serves 3)

2 pcs Red Apples (I'm using South Africa Honey Apples)

300g Chicken Meat (can be replace with pork ribs / chicken feet)

1 Carrot

2 pcs Dried Abalone Slice (optional)

2pcs Honey Dates

8 pcs Red Dates (pitted)

1.5L Water

Salt to taste

(I'm mixing in some chicken feet with some pork bones)

Step by Step:

1. Clean apples & remove the wax on the skin or peel away the skin. Cut apples & carrot.

2. Blanch chicken feet/pork ribs/chicken meat in a small pot. Discard water and rinse blanched meat under running water.

3. Put water in a big stock pot and bring to a boil. Add in all the ingredients except salt.

4. Reduce heat & let it simmer for 2 hrs.

5. Season with salt.

6. Serve hot.
