Healthy Egg Salad Sandwich


Simple breakfast that you can teach your kids to make it themselves. Kids tend to eat more when they are involve in the food preparation / cooking process.

Let's start the day with this healthy egg salad sandwich. Simple recipe with simple ingredients. Garnish with some baby tomatoes or cucumber slices or lettuce. Voila, there you have it..

Ingredients: (serves 2-3)

4 Eggs

3 tsp Mayonnaise

2 pkt Black Pepper (I'm using McD type)

1/4 tsp Fine Salt or to taste

Garnishing of your choice:

some Lettuce / Cucumbers

some Baby Tomatoes

Bread of your choice

Step by Step:

1. Cook eggs in a pot of water for 15 minutes or until it turn hard-boiled eggs.

2. Soak them in cold water to cool down & easy peeling.

3. Discard egg shells & mashed eggs with a fork till crumbly. No need to be smooth.

Some chunks of egg whites is alright, giving it some texture to bite.

4. Mix in mayonnaise, black pepper & salt and stir to mix evenly.

5. Cover with a wrapper and keep in the fridge to cool it down. For at least 1 hr or more. (You can also prepare this the night before if you intend to have it the next morning for breakfast)

6. To assemble, simply spread the egg salad onto the bread and you are ready to go.
