Thai Spicy Fried Egg Salad (Yum Khai Dao)


Been to Bangkok recently and get to try this dish - Yum Khai Dao or better translated as Spicy Egg Salad. This is one of the best Thai food that I've ever tasted. Love at first bite. It's spicy, salty, sour and sweet. So, today I'm gonna whip up this dish in my own kitchen. Fried egg with fresh carrot, tomatoes, onions and mix in fish sauce & lime juice dressings. Simple dish but so satisfying yumminess!!

The fried egg needs to be cut into bite size to make it easier to eat. Once the cut fried eggs are tossed in the dressing along with the other ingredients, the yolks get separated from their whites since they’ve been cut open. The integrated yolks then get mixed into the dressing which makes the dressing a bit creamier.

Love the refreshing sourness from the lime and fragrant fish sauce flavor. Those fresh tomatoes and carrot added into the dish gave it a different texture when you eat it. So yummy!!

And best of it, it's so easy to prepare with just a few simple ingredients. The frying isn’t that complicated, though. And I believe everyone can fried an egg. Try it yourself today. Always love Thai dish!!

Ingredients: (serves 1-2)

2 Eggs

2 pcs Baby Tomato - cut

1 pc Shallot - cut into thin wedges

20g Carrot - julienned

some Chinese Celery (cilantro) - cut into 1 inch length

Seasoning (Dressing):

1/2 tsp Castor Sugar

1 tsp Lime Juice (juice from 3-4pcs Lime)

1 tsp Fish Sauce

1 pc Chilli Padi - deseeded and cut

1 clove Garlic - smashed lightly

You will need cooking Oil to fry Eggs

Step by Step:

1. Mix all the seasoning (dressing) ingredients together in a big bowl. Stir till sugar melted. Set aside.

(Taste it. If too sour, add a bit more sugar. If too salty, add abit of clean/boiled water)

2. Heat up an egg pan and put in enough oil to fry the eggs. You need very hot oil to fry a nice eggs.

3. Crack in egg into the hot oil and fry till the sides is crispy. Then flip to fry the other sides till the egg yolk is fully cooked.

4. Remove and set aside on a plate to cool down slightly. Repeat the same for another egg.

5. Cut fried eggs into 9 pieces.

As you can see, it's okay so have some crispy brown edges. It's more tasty & fragrant.

6. Put everything into the seasoning sauce bowl and mix evenly. Make sure the sauce coated with all the ingredients.

7. Dish up & serve. Garnish with some chinese celery (cilantro) on top.

You may eat them with hot steamed rice or eat it on it's own.
