Winter melon is sweet in taste and slightly cold in nature. Winter melon, you can buy those cut slices from the wet market or as a whole. You can get the small whole melon type (the flesh is hard, compact, heavy). But the best is still the request-to-cut type at the wet market. Those were giant elongated melon which the skin is more puffy and abit airy.

Ingredients: (serves 4-6)
780g Wintermelon (weigh with skin). - after skin & seed removed weigh about 610g
25g Dried Longan
1/2pcs Lo Han Guo
80g Rock Sugar / to taste
1.8L Water
Step by Step:
1. Remove skin & seed from the wintermelon, rinse thoroughly.
2. Using a grater, grate wintermelon into thin strips.
3. Put everything into the pot (except rock sugar) and bring to a boil. (about 30mins)
4. Once boiling, reduce heat & let it simmer slowly for about 30mins.
5. Add rock sugar and continue simmer for another 10 mins until rock sugar melted.
6. Ready to serve. Serve hot or chilled.
