Meatless Green Radish Carrot Soup


This meatless soup is so tasty and you won't believe that it is actually meatless. It just taste like any other soup that you boiled with chicken / pork meat or bones.

This is another soup for those of you who wanted an oil- free soup. It's totally healthy as you won't see layer of oil or bits of fats from meat, floating on the surface of the soup.

Please do not buy those chestnuts that have an entire shell on! You can buy from chinese grocery store especially during the May or June when it's near Chinese Bak Chang Dumpling Festival. Those were dried and without shell. More easier to handle. Otherwise you will need to de-shell and remove the skins is a hassle and time consuming.

Green radish. As you can see the skin is partially greenish in color. Don't mistaken, it's not same as white radish.

After peeling the skin, the inside still partially green & white.

This is after cutting in the center, it has a nicely green ring as the outer flesh while inside part is greenish white.

Try this soup recipe for a healthy diet change.

Ingredients:

1 Green Radish - cut

1/2 Carrot - cut

5-6pcs Dried Chestnut - rinse

3 pcs Dried Chinese Shitake Mushroom - rinse

1/3 Dried Cuttlefish - cut into 1cm strips

1500ml Water

Salt to taste

* you can also add sweetcorn for a more sweeter soup.

* If you noticed the chestnuts partially or totally black or dark colour on its exterior, please remove that part or discard.

Step by Step:

1. Put water and all ingredients (except salt) in a pot. Bring to a boil over high heat.

2. Reduce to low heat & simmer for 2 hours.

3. Season with salt and ready to serve.
