Pureed Broccoli Soup

When it comes to great-tasting nutrition, broccoli is an all-star food with many health benefits. While low in calories, broccoli is an excellent source of vitamin K, vitamin C, chromium, and folate. It is a very good source of dietary fiber, pantothenic acid, vitamin B6, vitamin E, manganese, phosphorus, choline, vitamin B1, vitamin A (in the form of carotenoids), potassium, and copper.

Try this easy & delicious broccoli soup. No milk or heavy cream added. Definitely a healthy choice.

All purpose flour is used to replace thickened cream and also makes this filling soup creamy but also keeps it low in calories and fat.

Ingredients: (serves 2-3)

100g Broccoli - tough ends removed, stems and florets chopped

1 small Red Onion/Yellow Onion - thinly sliced

30g Carrot (about 3cm) - thinly sliced

3 tbsp All Purpose Flour

15g Butter

300ml Water

150ml Chicken Stock

1/8 tsp table salt, or to taste

1/8 tsp black pepper, or to taste

Step by Step:

1. Heat up pan & melt butter. Add in onions and saute for about 1-2 mins till fragrant.

2. Sprinkle all purpose flour and stirring till combine.

3. Slowly pour in chicken stock and follow by 300ml water and keep stirring. At this time, it will slowly thickens. It's okay if there is some small flour lumps. It will slowly dissolve later or during blending time.

4. Add in broccoli and carrot to the soup. Cover with lid and let it simmer under medium low heat for about 10 minutes. Stir it occasionally every 2 mins to prevent lumps settled at the bottom.

5. Remove soup from heat and transfer to blend until smooth. Pureed the soup in batches.(Note: Be careful not to overfill blender to prevent the hot liquid from splattering. Practice caution when pureeing hot liquids.)

6. Pour back into the pan, season with salt & pepper to taste.

7. Scoop into serving bowl & serve hot.​

TIPS: You can replace water with chicken stock for a more flavorful soup. If so, please be reminded to reduce the salt to be added in, as the chicken stock is already season with salt.
