Thai Style Steamed Siakap Fish with Garlic & Lime


Siakap Fish also known as Barramundi or Kim Bak Lor 金目鲈 [Chinese].

Thai style always link to the spicy & sour flavour. This is always a must order dish whenever we dine in a Thai restaurant. Thai style always link to the spicy & sour flavour. This is a quick dish to prepare. Make sure you have some steamed rice to go with it.

Ingredients :

1 pc fresh Siakap Fish (medium size)

5pcs Ginger (thinly sliced)

2-3 Chilli Padi, chopped- can add more if you like spicy

5 cloves Garlic, finely chopped

Seasoning:

2-3 pcs Lime - squeeze out the juice (I'm using Limau Kasturi)

1 tsp Fish Sauce

1 tsp Light Soy Sauce

1 tsp Cooking Oil

pinch of Salt

1/2 tsp Sugar

Garnishing: (optional)

some Coriander / scallions

Step by Step:

1. Clean & score the fish at an angle on both sides to help it cook faster. Rub some salt on both sides. Set fish on a heat-proof plate which is able to put into the steamer.

2. Heat water in steamer until boiling.

3. Lay ginger slice on the fish and inside the stomach. Then spread the chopped garlic & chilli padi.

4. Then pour in cooking oil, light soy sauce & fish sauce, pinch of sugar to the fish.

5. Put the prepared fish in the steamer and steam under rapid boiling water for 10 minutes or until fish is cooked.

6. Remove from steamer and pour lime juice over the top and serve hot.
