Beehive Cookies aka Kuih Ros / Kuih Loyang


Beehive Cookies also known as Kuih Ros, Kuih Loyang, Kuih Goyang or Kuih Sarang Tebuan. I'd been making this every Chinese New Year. Just love the crispiness of this cookies. My favourite since young.

Recipe tested many times. Notice that water is added into the batter for extra crispiness.

This actually looks easy but actually is quite technical. You need to control the heat in order to yield a nicely brown beehive cookies. More details will be explain in the last part of this post.

Ingredients:

200g Rice Flour

3 Eggs

200ml Coconut Milk (I used packet type)

180g Sugar

1/2tsp Salt

3 tbp Water

Cooking Oil for frying

Tools - Kuih Ros / Beehive Mould

Step by Step:

1. Mix all the ingredients together till mixture is smooth & lump-free using a spoon/whisk.

2. Heat oil in wok. Make sure oil is enough to soak the whole mould.

3. Turn to medium heat. Place bee hive mould in heated oil and heat mould till hot.

4. Remove mould and shake off excess oil, then dip into batter. Do not soak the whole mould into batter. Just soak up the the top level so that later it can be easily shake off.

5. Return soaked mould into the hot oil. Once the batter set, slowly shake the mould to unmould the beehive.

6. Flip it and fry on both sides till golden brown. It burns easily. Just keep an eye on it so that it browns nicely on both sides. If undercooked, it won't be crispy.

7. Repeat process will mixture is used up.

8. Place cooked beehives on kitchen towel so soaked off excess oil.

9. Store in airtight container once beehives properly cooled down.

TIPS:

Heating the mould also plays an important part. It must not be too hot or too cold.

(1) TOO HOT - mould will cause sizzling effect when dip into batter and batter immediately cooked/set and slides off before it reaches the wok/ hot oil.

(2) TOO COLD - Batter won't stick nicely to the mould and if so, it won't release when it reaches the hot oil.

See the below result of different heat for the mould. Heat depends on how long you dip it in the hot oil. Normally just about 30-40 secs will do. Over 1 mins is consider over heat. (based on using medium heat)

Just nice heat will gives a smooth texture on the finish product.

Whereas overheat mould will gives a bubbling rough texture.

You need to try an error for few times in order to get the perfect piece of beehive cookies. Once you master this, you can do 2 moulds at a time which is way more faster. For beginner, I suggest you to do it one by one.
