Roti Jala simply means "Net Bread". This is a very traditional Malay food, commonly serve at Malay functions or wedding, usually serve along with meat curry.
It resembles some thin crepe or pancake that is make into netting pattern using a special mould, then folded or roll into spring roll shape.
Once you master the batter consistency, it's easy & fun to make. This Roti Jala's recipe remain soft and be able to last for the whole day.
Ingredients: (makes about 22 pcs)
2 cups All Purpose Flour
2 tbsp Cooking Oil
1/4 tsp Salt
1 Egg
2 tsp Castor Sugar
1/4 tsp Tumeric Powder
500ml Water / Coconut Milk ( I'm using water+ 4 tbsp coconut milk)
You will need a Roti Jala mould & a non stick pan.
Step by Step:
1. Mix all the above ingredients in a bowl and stir till combined and smooth.
2. Use a strainer to strain the batter to remove any small lumps. Otherwise it will stuck in the mould later when pouring out.
3. To check whether the batter is ready to flow through the mould perfectly. Test the batter consistency by pouring some batter into the mould. If the batter flow out smoothly that means you can start to cook. If the batter flows out by dripping drop by drop, then it means the batter is still too thick. Add some water bit by bit until you reach the consistency that it able to flow out smoothly. It should be flowing out & create a long line and not disconnecting short lines and dots.
4. Using medium-low heat, heat up Queen's Xense Double Pan. No need to put oil. (If you are using normal pan, you can grease by wiping/spray with some cooking oil to prevent sticking)
5. Lay the mould on a plate & fill the mould with some batter.
6. When the pan is hot, you can slowly run the mould in circular motion and make a net pattern.
7. Let it cook for about 1 minute, then carefully remove from the pan. (No need to cook on both sides, just 1 side will do)
8. Repeat the same for the rest of the batter.
9. Meanwhile while the Roti Jala is cooking, you can fold it into your desired shapes.
10. Serve with your choice of curry sauce dippings.
