Mix Vegetables Curry


Simple 1 pot dish again. Today sharing my mix vegetables curry recipe. I know this is a very common dish that you will be seeing everyday at mixrice stall or the aunty selling at her economy meehoon stall. This is so easy to make. Cook a big pot for the whole family at home and so much cheaper than eating outside.

One thing I love most in this dish is the dried tofu puffs that soaked up the curry sauce & when you bite it, the sauce will like burst out in your mouth. You know what I mean if you are a fan of tofu puffs as well. All the other vegetables were cooked till just right, tender to bite and still looking colorful.

This dish can be eaten with rice or any plain fried noodles like meehoon or mee.

Ingredients : (serves 3-4)

6 strands Long Beans - cut into 4cm length

6pcs Lady's Finger - halves

1pcs Potato - cut into cubes

2pcs Small Brinjal - cut into 4cm length & divide 4

5pcs Dried Tofu Puffs - halves

2 sprigs Curry Leaves

3pcs Shallots - finely minced

3 tbsp Cooking Oil

100ml Coconut Milk

250ml Water

7tsp Curry Powder (for chicken/meat)

Seasoning:

1 tsp Sugar

1/2 tsp Salt

2 tsp Light Soy Sauce

1 tsp Fish Sauce

1 tbsp Mushroom Flavoured Oyster Sauce

Step by Step:

1. Mix Curry Powder with 6 tsp of Water and stir to a paste texture.

2. In a heated pan, add cooking oil & saute minced onion for 1 minute.

3. Reduce to low heat, add in curry powder paste and stir till fragrant for about 2 mins.

4. Add in curry leaves & diced potato. Stir to mix throughly.

5. Add water to the pan and cover lid to simmer potato until slightly soft for about 5 mins on medium heat.

6. Then, put in long beans, dried tofu puffs and coconut milk. Let it cook for 2 mins.

7. Finally, throw in the brinjals, lady's fingers & seasoning sauce. Stir evenly. Cover & let it simmer for another last 5-6 mins. Stirring occasionally.

8. Ready to serve. Serve with hot steam rice or plain fried noodles.
