Pumpkin Dried Oyster Chicken Soup


Pumpkin is a widely grown vegetables incredibly rich in vital antioxidants, and vitamins that:

- high in dietary fibre

- high in Vitamin A which promotes good vision

- form and maintain healthy skin,teeth and bones

- lower blood pressure

- help relax & sleep better

- have a healthier heart

- both vitamin C and beta-carotene offer an immunity boost

For this Pumpkin Chicken Soup recipe, I used Chicken feets & carcasses. It may sounds gross & I know alot of you might be sceptical about using chicken feet. But I loved chicken feet as it is high in collagen content & collagen is needed to keep our skin remain youthful & beautiful.

To see the collagen content in the chicken feet soup, put the soup in the fridge for overnight. The soup will solidifies into jelly texture when refrigerated.

Most collagen or collagen supplements are expensive. So why pay so much when you can have it cheap or almost free (Yes, it usually get it free whenever I purchase chicken meat from the seller). Use chicken feet in your soup, broth and cooking and enjoy the benefits of collagen.

Another ingredients that I like to use in soups is Dried Chinese Mushroom's Stem. I will pluck out all the mushrooms' stem & keep aside for future use. Mushrooms will be use for normal cooking while the stems will be kept for soup's use. Mushrooms' stem will make soup tastes sweeter.

Ingredients: (serves 2-3)

360g Pumpkin

250g Chicken Feet / Carcasses

2pcs Dried Oyster

5-8pcs Red Dates (Seed removed)

1 slice Dried Abalone

4pcs Chinese Dried Mushroom’s Stem

1200 Water

Salt to taste

Boiling water to scald Chicken

Steps by Steps:

1. Remove pumpkin skin & cut into thick cubes.

2. Scald chicken feets/carcasses in boiling water for 5 minutes. Rinse & set aside.

3. Put water and all ingredients (except salt) in a pot. Bring to a boil over high heat.

4. Turn to low heat & simmer for 1 hour 30 mins. You will have clear soup like below.

5. Season with salt.

6. Ready to serve hot.

If you like a thicker soup, boil abit longer until the pumpkin melts and the soup will become slightly thick & orangey in colour. (see below)
