This Coconut Milk Layered Agar-Agar Dessert recipe is using the traditional Agar-agar strips. Layered with coconut milk, it gives a nice transparent layer in between.
You need need to be patient while doing this as you need to wait for each layer to set before pouring in the next layer. 'Set' means it slightly hardens while forming a thin solid layer. Not necessary to harden it. In my case, pouring a chinese spoonful into the cup, I just need to wait for about 4-5 minutes per layer. Of course if you are making in a bigger bowl or thicker layer, it will takes longer time to set.
Most important tips is to check your table or surface that you are putting the cups, make sure on a the flat and even surface without any slopes (level). Otherwise, your jelly will not turn out nicely.
Ingredients : (makes 8 small cups).
(A)
15g Strips Agar Agar (I used Burung Layang-Layang Brand)
600ml Water
90g Rock Sugar
2 pcs Pandan Leaves
(B)
120ml Water (Room temperature)
125ml Coconut Milk (I'm mixing Kara 60ml thick coconut milk + 65ml water)
Few drops of food colouring
Step by Step :
1. Cut agar agar into shorter strips & soak for about 10-15mins. Drain & set aside.
2. Boil 600ml water with pandan leaves till fragrant.
3. When water start boiling, add in soaked agar-agar strips & boil until fully dissolves. Stirring occasionally.
4. Add in rock sugar & keep boiling till it dissolves.
5. Separate agar-agar mixture into 2 equal parts into 2 mugs. Hereby refer to Mug A for Coconut Milk mixture & Mug B for colour mixture.
6. For Mug A - Pour in the coconut milk into the agar-agar mixture & stir evenly.
7. For Mug B - Pour in the 120ml water into the agar-agar mixture + add few drops of your preferred colouring & stir evenly.
8. Now to start layering the agar-agar mixture, use a chinese soup spoon coconut mixture (Mug A) carefully into small cups. After each layer, leave it awhile (about 4-5mins) to set but not harden.
9. Then for 2nd layer, use the chinese soup spoon to slowly pour color mixture (Mug B) & repeat the same until the mixture use up and all layers completed.
NOTE : Double boil the 2 mugs with agar-agar mixtures under low heat if you are worried the mixtured harden too fast before you finish layering.
10. Let the agar-agar cups cool down at room temperature before putting into the fridge to chill.
11. Serve chilled.
