Steamed Cabbage Rice


It's been headache to cook something simple, fast & easy for one person and yet healthy. Most of the time, we will just resort to instant noodles for a fuss-free meal.

Forget about instant noodles, you might want something quick, fast preparation, time saving & most important less washing. How many of us will actually cook a small single portion of something like 3 dishes & 1 soup? It's just too much work & time consuming right?

How about this - Steamed cabbage rice, a one plate meal. Cabbage is one the easiest available ingredients.

I don't really like to use rice cooker to cook rice especially cooking in small portions. So normally I just steam my rice in a plate.

Ingredients : (for 1 person)

70g rice, washed & drain

2 tbsp cooking oil

1 shallots, thinly sliced

40g lean pork, sliced

20g XO Chinese sausage (Lap Cheong), thinly sliced

1 medium dried shiitake mushroom, soaked & thinly sliced

10g dried prawns, soaked & finely chopped

100ml water

Seasoning :

1/2 tsp light soy sauce

1/3 tsp dark soy sauce (more if you preferred darker color for the rice)

dash of white pepper

1/2 tsp oyster sauce

Marinade for pork :

1/2 tsp Shaoxing wine

1/3 tsp light soy sauce

1/3 tsp sesame oil

1/3 tsp corn flour

dash of white pepper

(Wash rice & add water. Use a plate/bowl that suitable for steaming)

(Put the cooked cabbage on top of the washed rice)

Here's the step by step :

1. In a heated wok, add cooking oil. Fry shallots for about 1 minutes. Add in chopped dried prawns & fry till fragrant.

2. Add in pork sliced, mushrooms & chinese sausage. Stir to mix & cook for about 1 minute.

3. Add in cabbage & seasoning. Mix thoroughly & turn off heat. No need to cook the cabbage as later the cabbage will cook again during steaming process.

4. Remove & set aside.

5. Wash rice & add water. Use a plate/bowl that suitable for steaming.

6. Put the cooked cabbage on top of the rice. Do not stir.

7. Put the whole plate/bowl for steaming on rapid boiling water for 15 minutes.

8. After 15 minutes (do not open the cover), turn off heat & let it sit inside for another 8-10 minutes until the rice is fully cooked.

9. Open cover to check the rice texture, if the rice still hard, add little bit of cooked water & continue to cover it. (different type of rice uses different level of water)

10. Once done, stir to mix & ready to serve.

11. Serve hot.
