Fluffy Pancakes


Anytime of the day, whenever you are craving for this yummy light & fluffy pancakes, you can easily prepare this. Not something like the classic or traditional way of preparing pancakes. But, these are made by folding in a simple meringue into the batter.

This is definitely a healthy meal as I don't use a single drop of oil when pan frying these pancakes. Yes, using Queen's Xense Casserole, Non-stick and you can make nice golden pancakes. Just remember that the pan need to be clean & using low heat. (My highest temperature is 9, I'm using heat no. 3 here). Wipe the surface of the pan with a damp cloth (not wet) after completed each pancakes. No oil. No butter.

Ingredients : (makes 12 medium pancakes)

90g Cake Flour

125ml Fresh Milk

1 Egg Yolk

20g Castor Sugar

1/4 tsp Baking Powder

1/2 tsp Vanilla Essence

pinch of Salt

Meringue :

1 Egg White

10g Castor Sugar

Step by Step:

1. In a bowl, mix together cake flour, milk, egg yolk, sugar, baking powder, vanilla essence & salt. Mix until no lumps and batter become smooth.

2. In a separate bowl, whisk egg whites & sugar till stiff peaks form.

3. Using a spatula, gently fold the meringue (egg whites) into the batter until no visible white streaks. Do not overmix.

4. Heat up pan. Use medium low heat. Use a small ladle & pour a scoop of batter.

5. You will see some bubbles forming. Once you see the bubbles stop forming (about 1 mins), flip the pancake and the bottom should be golden brown.

6. Cook both sides till golden brown.

7. You can make everything in one go & keep aside. Reheat when you want to consume later.
