Bought fresh Soy Bean Milk from the market & making them into Soy Milk Longan Pudding. A cooling dessert suitable on a hot day, a real thirst quencher.
This pudding gives a very soft texture, softer than tofu (beancurd), silky & melts in your mouth.
Soy milk, which is made from soaking, grinding and boiling soy beans with water, is a very nutritious drink. Soy is naturally high in essential fatty acids, proteins, fiber, vitamins and minerals. Soy milk is good for your skin too.
Ingredients : (makes about 20 small cups container)
6gm Agar-agar powder (Swallow Brand)
750ml Water
750ml Soy milk (sweetened)
110ml Evaporated Milk
110ml Syrup from Canned Longan
1 Can Longan
Sugar to taste (optional)
2 blades Pandan Leaf
Step by Step:
1. Prepare jelly cups and put 1-2 pcs longan in each cup.
2. Boil 600ml of water with pandan leaf.
3. Mix agar-agar powder with the balance of 150ml water, pour into (2) above. Keep stirring to prevent clumps.
4. Let it simmer for about 5 minutes. Turn off heat.
5. Remove the pandan leaf.
6. Add in the Longan Syrup, Evaporated Milk & Soy Bean Milk. Stir evenly.
7. Pour into jelly cups. Leave to cool before putting into fridge to chill.
8. Chill for at least 2 hrs to completely set.
9. Serve chilled.
