Here's to share a simple pancake rolled with sugar grounded peanuts. Suitable to make for breakfast or tea time snacks.
You can make a batch of fried peanuts ahead and use it within a week. So that you don't need to fry peanuts everytime you making this if you are planning to make this few times in a week.
Fry your own peanuts (no need oil), remove skin after cool down and put in a plastic bag. Then roll it using a rolling pin to make the grounded peanuts.
Ingredients : (Make 2 rolls)
Pancake Batter
50g All Purpose Flour
1/2 tsp Sugar
pinch of Salt
95ml Water
Fillings
45g grounded peanuts
20g castor sugar
1/4 tsp of melted butter
Step by Step:
1. Combine all ingredients for pancake batter & mix evenly.
2. Combine grounded peanut with sugar & mix evenly.
3. In a heated casserole, add melted butter to oil the pan. Then use a piece of kitchen towel to wipe away the butter from the pan.
4. Using low flame, pour half of the batter into the pan. Swirl the pan immediately to let the batter flow evenly to the sides of the pan. Make a round pancake shape.
5. Let it cook for about 2 minutes & the surface will start to cook. Put in peanut mix on the whole surface.
6. Let it sit for another 1-2 minutes or until the base start to turn brownish.
7. Using a chopstick & spoon, slowly roll the pancake.
8. Remove from pan & cut into sections.
9. Ready to serve. Serve hot.
