If you are watching your carb intake , you can replace eating your carbs with super healthy cauliflower. As for me, I just ate 1 portion of this to replace my normal steamed rice.

This dish is so creamy, tender soft cauliflower mixed with melted cheese, I just love it!! Yes, I love anything with cheese!! If you love cheese, you will definitely love this too!!

This is a perfect side dishes for any main course or serve it when having a party, just eat it on its own. Easy to prepare. So delicious!! Probably an afternoon snack for the kids.

Ingredients : (serves 2)

220g Cauliflower

200ml milk

2 tbsp salted butter

2 tbsp all purpose flour

2 slice cheddar cheese

dash of black pepper

dash of salt

4 cups of water for blanching

Steps By Steps :

1. Trim & cut cauliflower in small florets.

2. Boil water, add some salt & blanch cauliflower for about 3-5 minutes or until just tender. (depends on the size of your florets). If you like it crunchy, shorten the blanching time.

3. Drain well & arrange cauliflower in a glass/ceramic bowl/casserole (oven-safe) dish.

4. Preheat oven at 225C.

5. In a heated pan, using low heat, melt butter.

6. Then add in milk & stir to mix & bring to boil.

7. Slowly sprinkle in the flour using a spoon & quick stir. You have to stir really quick here as the sauce get thickens really fast.

8. Add in cheese & seasoned with some salt & pepper.

9. Once the cheese melt & sauce thicken, remove & pour it over the cauliflower.

9. Place in the preheated oven for 15 minutes until top turns golden brown & bubbling.

10. Serve while it's still hot.

Caution : It can be very hot once out from oven. Toddlers or kids must eat under adult's supervision.
