This cream of tomato soup is a deliciously thick soup made from tomatoes, pepper, onion and garlic. This is more than an appetizer and it can be easily served as a fulfilling dinner serve with some bread. It's amazing how even the simplest ingredients, prepared in less than 30 minutes could be extremely flavorful.
Get some really ripe tomatoes for making this soup, otherwise your soup will be too sour.
Ingredients : (serves 2)
4pcs ripe Red Tomatoes (big size)
2 cloves garlic (finely chopped)
2 shallots (finely chopped)
250ml (1 cup) chicken stock (I'm using the tetra pack type)
3 tbsp butter
1 tsp sugar
pinch of salt
dash of black pepper
pinch of mixed italian herbs
2 cups water (boil tomatoes)
Step by Step :
1. Remove skin of tomatoes by boiling whole tomatoes for 5 minutes in hot boiling water.
Then chopped/diced tomatoes. Seeds removed.
2. Melt butter in a pan.
3. Add chopped onion and garlic. Sauté till smell fragrant and turn golden.
4. Add chopped/diced tomatoes.
5. Sprinkle salt, black pepper & a pinch of mixed italian herbs.
6. Add chicken stock. Let it simmer & boil for 10 - 12 minutes.
7. Turn off heat. Pour soup into food blender & blend to a fine smooth puree.
8. Divide portions into soup bowl.
9. Serve it hot.
