Steamed Pandan Egg Cake

Bringing back a nostalgic food. No oven needed, all you need is just a steamer. No butter or milk required in this recipe. A very easy to make, traditional steamed egg cake. Added freshly blended pandan juice for a real pandan flavour. Soft texture.

Ingredients :

3 Eggs

60ml Pandan Juice (3 pandan leaves + 60 ml water)

120g Icing Sugar

135g Self Raising Flour (sifted)

30g Canola Oil / Vege Oil / Corn Oil

Optional : 1-2 drops of green food colouring

Steps by Steps :

1. Cut pandan leaves in small piece, add water & blend together. Strain to get the pandan juice.

2. Line the cake mould at the base for easy removing later on. No need to grease the side of the pan.

3. Preheat steamer by boiling the water in the steamer.

4. Beat eggs & icing sugar until fluffy & pale.

5. Using a spatula, fold in sifted self raising flour in batches.

6. Add pandan juice, oil & green food colouring. Fold to mix evenly.

7. Pour batter into cake mould.

8. Put cake into the steamer. Steam for 25mins on rapid boiling water.

9. Remove from pan & let it cool down.

10. Cut & serve.
