Who love those pickled green chillies at those wantan mee noodle stalls? Often these whole jar of cut chillies will be put on every table, still soaking in vinegar & sugar mixture. And you can eat all you can. A crunchy & appetizing pickle. Its a condiment that people usually like to eat together with their noodles or chee cheong fun. Or sandwiches perhaps?
This is so easy to prepare at home. Yes, make from scratch. Process is simple & quick. I mean, you can start to enjoy your jar of pickled green chillies after 2 hours of soaking it. That's fast right?
Ingredients : (yields 1 small glass bottle)
80g green chillies
125ml rice vinegar
40g fine sugar
1/3 tsp salt
hot water
Steps by Steps :
1. Wash chillies. Slice chillies into desired thickness.
2. Put cut chillies in a bowl & pour hot water & let it soak for about 20 seconds.
3. After that, drained away the hot water.
4. Now, mix vinegar, sugar & salt. Stir continuously until sugar & salt dissolved.
5. Place drained chillies in the dry jar (preferably to use glass jar & don't use plastic jar as vinegar acidic content will cause chemical effect reaction)
6. Then pour in the vinegar mixture.
7. Cover the jar tight and let the vinegar does their job after this.
8. The chillies will be ready after 2 hours.
9. Unfinished portion can be kept in the fridge.
