Japchae

Japchae simply means Korean Glass Noodle.

Korean glass noodle are basically Sweet Potato Noodles, the color is abit greyish as compared to normal glass noodles. You can make this noodles as a main dish or side dishes (Banchan)

Here's the ingredients :

(Serves 2)

150g Glass Noodle

1/2 carrot (shredded)

3 medium size fresh shiitake mushroom (sliced) - you can substitute with dry ones

1/4 medium size yellow onion - thinly sliced

little bit black fungus - thinly sliced

1 small bunch spinach (can substitute with chinese spinach/cabbage)

100g chicken/beef (cut into stripes) / substitute with mix seafood of your choice

1 teaspoon sesame seed (optional)

Seasoning sauce: (mix all together)

2 teaspoons of sesame oil

2 teaspoons of corn oil

4 teaspoons of soy sauce

4 teaspoons of sugar

pinch of salt & pepper

6 tablespoon of water

Step by steps :

1. Boil water in a pot/pan and cook the glass noodle for about 7-8 minutes or until its fully cooked. Cooked glass noodle should be springy and transparent.

2. Remove noodles, drain & put noodles in a bowl of cold water. Drain it again. Put noodles in a large bowl. Add 1 teaspoon of sesame oil into the noodle. Mix well & set aside.

3. In a heated pan, add 1 teaspoons of sesame oil & 1 teaspoon of corn oil, stirfry shredded carrot, mushrooms, black fungus, onion, spinach & 1 tablespoon of the seasoning sauce & stir for 4 minutes & set aside in a bowl.

4. Add some sesame oil & corn oil, fry the beef/chicken strips till it cook. Add some seasoning & continue to cook. Set aside in a bowl.

5. Mix the the vegetables & meat that was cooked just now with the glass noodle & the balance of the seasoning sauce. Mix throughly and then sprinkle sesame seeds on top.

6. Serve with rice & kimchi or as a side dish.
