Beat the heat with this cooling and nourishing dessert soup. It requires only a few ingredients- snow pear, red dates, peach gum, dried longan, snow fungus. Enjoy it warm or chilled.

Ingredients :
1 pc Snow Pear
10g Peach Gum (soaked overnight)
4 pcs Red Dates (medium size)
12-15pcs Dried Longan
1/2 pc Snow Fungus
1 tbsp Gojiberries
30g Rock Sugar
1 Ltr Water

Step by Step:
1. Soak peach gum in a bowl with 1 1/2 cup of water for overnight. Place them in fridge.
I soaked them for 16 hours. It should expand and soft to touch. By next day, the water will be mostly absorbed by the peach gum & it expands 8-10 times it's size. For bigger piece of peach gum, the center might be still abit hard, you just need to soak them a little bit longer.
2. Pick & remove the impurities (little specks of black color stuffs). Rinse till the jelly-like peach gum until it is sufficiently clean.
3. Soak fungus for about 20 mins till soften. Cut away the hard stem. Then tear the fungus petal into smaller pieces.
3. Rinse pitted red dates, dried longans and snow fungus before putting them into a pot of water and boil on stove for 25 minutes.
4. Remove pear skin, cut into 4 pieces, remove middle part (seed). Add in the soaked peach gum and pear into (3) above.
5. Continue boil for another 25 mins. Add in rock sugar and gojiberries during the last 10 minutes.
(Note : Boiling too long will cause the peach gum to melt into the soup & you will have a pot of glue /thick soup).
6. Serve hot/ warm or chilled. I love it when it's chilled. So refreshing & yummy.
