Sago Gula Melaka Pudding

A classic Malaysian dessert love by many. Chewy sago pearls served in coconut milk and drizzled with melted rich palm sugar syrup. This dessert is easy to prepare with just few ingredients.

Ingredients : (makes 3 portions)

40g Sago (small)

1 blade Pandan Leaf

400ml Water


Palm Sugar Syrup:

25g Palm Sugar (Gula Melaka) roughly chopped

10g Hot water

1/2 blade pandan Leaf


Coconut Sauce :

40ml Coconut Milk

20g Water

1/2 blade Pandan Leaf

Pinch of Salt

1/4 tsp Corn Starch (mix in 6g Water)


Method :

1. Boil 400ml water with pandan leaf in a pot. Once the water boiling, add in sago pearls. (Do not wash sago pearls. If really you must wash, just a quick rinse before cooking. Do not wash and leave it sitting there, it will gets soften and melts easily when cook)

2. Boil sago for 5 mins, stirring continuously to prevent them forming lumps and sticking together.

3. After 5 mins, you will see sago will still have white dot in the center. Turn off heat, and cover and let it sit for 15 mins until they turn fully transparent.

4. Pour sago into a strainer and wash off excess starch in running tap cold water.

5. Scoop sago pearls into individual moulds or cups / bowls. Chill in fridge for about 2 hours to fully set.

6. Prepare palm sugar syrup by boiling gula melaka, pandan leaves and hot water in a saucepan. Use low heat to prevent burning. Stir constantly until fully dissolved. Set aside to cool down.

7. Prepare coconut sauce by boiling coconut milk, pandan leaf, salt and water in a saucepan. Use low heat to prevent burning. Stir constantly until it started to simmer. Slowly stir in corn starch mixture to thicken the sauce. Set aside to cool down.

8. To serve, unmould sago onto dessert plate or bowl. Spoon palm sugar syrup and coconut sauce over the chilled sago.

(You can also serve them straight from the bowl by drizzle coconut sauce and palm sugar into the bowl without the need to invert them)
