Red Bean Agar-Agar

A classic favorite taste, red bean agar-agar with coconut milk.

Ingredients: (makes 1 - 18cm x 18cm pan)


Red Bean Layer

75g Red Bean Paste

5g Sugar

5g Agar-Agar Powder

370ml Water

1pc Pandan Leaf


Coconut Layer

45g Sugar

5g Agar-Agar Powder

300ml Water

100ml Coconut Milk

1 pc Pandan Leaf


Step by Step:


Before pouring the jelly mixture into the mould, slightly wet the mould. This is to prevent the mooncake jelly from sticking to the mould and easy removal. It's okay to have some water drops in the mould.


To make coconut layer

1. Boil water, agar-agar, pandan leaf, and sugar. Bring to boil until agar-agar fully melted.

2. Pour in coconut milk and bring to boil again. Quickly turn off heat once you see it start to bubbling.

3. Pour into 18cm x 18cm square pan or any other pan of your choice. Wait for it to cool down. Use fan to blow to speed up the process.

(Wait 30 mins before start cooking the red bean layer)


To make red bean layer

1. Add in all the ingredients and bring to boil. Stirring continuously making sure the red bean paste melted & doesn't stick to the base of the pot.

2. Strain mixture for pouring into pan.

3. Use a fork to poke few holes on the coconut layer, this step to make sure both layer sticks properly.

4. Holding a spoon on one hand, slowly pour red bean mixture to the back of the spoon to let it flow gently onto the half-set coconut layer.


5. Set aside to cool down.

6. Transfer them into the fridge to chill for at least 4 hrs.

7. Remove and cut to pieces.
