Pig Stomach Soup With White Peppercorns (胡椒豬肚湯) using Pressure Cooker

It’s incredibly warming with succulently tender meat! White pepper is consider to have warming effect in Chinese medicine, so this soup is really good for the cold weather and the stomach.

Get the whole peppercorns from the market, then crush the peppercorns gently in a mortar and pestle to crack them, so that the flavor can release more efficiently.


Pig stomach is the internal organ that is found just under the liver and is responsible for storing and breaking down nutrients. They can be found fresh or frozen from butchers, while some sell them pre-cleaned.

I got mine pre-cleaned, so it's saving me so much time and hassle of cleaning. You can get them in a large or small size, depending on your preference.


Pig stomach is hard to cook until tender, you will need hours of boiling, usually 3-4 hours. To speed up the process, I'm using pressure cooker to cook this soup. Just a short 50 mins time, pork belly, pork ribs and meat were tender and the meat falls off from the bones easily. And I love to add a few pieces of chicken feet into the soup, for extra collagen boost!


Ingredients: (serves 3-4)

155g Pork Stomach

360g Pork bones / meat

4pcs Chicken Feet

5g Whole White Peppercorns (crushed)

4pcs Red Dates (pitted)

850ml Water

5-6pcs Dried Scallops

Spring onions for garnishing (chopped)

Salt to taste

Method:

1. Crush the peppercorns gently in a mortar and pestle to crack them

2. Clean pork stomach but removing any loose fats and the yellowish skin if any. Then, cut pork stomach into strips.

3. Blanch the meat first by boiling some water in a pot, then blanch the stomach/meat/bones/chicken feet for 5 minutes until you see scum/blood floating on the surface of the water. Remove from the pot, wash under cold water and set aside. Discard the scum water.

4. Place the blanched pig stomach, pork ribs, meat and chicken feet, white pepper, red dates, dried scallops and water into the pressure cooker.

5. Cook soup by pressing "Tendon" Mode for 30 mins. Once it done, choose "Soup" mode and cook for another 20 mins. (I'm using Philips Pressure Cooker)

6. Once the soup done, add salt to taste. Garnish with chopped spring onions & serve hot.
