Similar to Nestum Chicken but this time we are using brinjal. Just deep fried brinjal with tempura batter, then coat them well with lots of Nestum. Best trick to cheat your kids to eat brinjal.
I'm using this Lobo brand of tempura batter, from Thailand (you can easily get from Thai Grocery shop) . Alternatively you can use other types/brand of tempura or crunchy batter mix. Just follow the packaging instructions on how to mix the batter.
You can use 3-in-1 packet Original Nestum to cook this dish. Otherwise the Original Nestum in tin/foil packaging works the same as well minus the milk powder content in it. Do not use porridge oat. It's a totally different thing.
Ingredients : (serves 2)
300g Brinjal (cut into 1cm thick sticks)
Tempura flour
Cooking Oil for frying
2 tbsp Butter
2 -3 springs of Curry Leaves, sprig removed
Cereal mix: (mix together)
50g Nestum Cereal
1.5 tsp Castor Sugar
1/2 tsp Salt
Step by Step:
1. Cut brinjal in long thick sticks. About 1cm thickness.
2. Heat up oil in wok.
3. Meanwhile, pour tempura flour in bowl and mix with cold water (or as per packaging instructions). Coat brinjal sticks with tempura batter.
4. Once oil is hot, drop brinjal sticks into oil one by one (so that they don't stick together). Fried till golden brown. Remove & strain away excess oil. Repeat for the rest of the brinjal.
5. In another wok, using low heat, heat up butter until bubbly & toss in curry leaves & chilli padi. Fry till it release the fragrant smell.
6. Stir in the Nestum flakes & stir to mix evenly.
7. Then add in fried brinjal sticks, castor sugar and salt. Toss thoroughly till well coated. The cereal should be lightly golden brown.
8. Remove & serve immediately.
