Nagasari Jagung (Corn Pudding)

Also known as Nyonya corn hon kueh or kueh jagung. Easy to make dessert. Coconutty creamy sweet and jelly like pudding texture. Originally were wrapped in pandan leaves in rectangle shape, but I made them in these cute little triangle pandan leaves casing.



Ingredients : (makes 18pcs)

(A)

45g Hoon Kwe flour (white color)

100ml Water


(B)

175ml Water

100ml Coconut Milk

40g Sugar

1 pc Pandan leaf

Pinch of salt


60g Corn Kernel

18pcs Pandan leaves

9pcs Wooden Toothpicks (halves)


Prepare pandan casing :

1. Cut away the thin ends of pandan leaves. Use the same width to fold the case.

2. Measure 2 inches and fold at every 2 inches for 3 times.

3. Trim the sides diagonally from the center line of the leaf.

4. Fold into triangle shape and secure with a wooden toothpick.



Step by Step:

1. Combine ingredients (A) in a bowl. Mix till smooth & set aside.

2. In a saucepan, heat up all ingredients (B) over medium heat till sugar fully dissolved.

3. Add mixture (A) and stir well.

4. Add corn kernels and keep stirring until the mixture thickens. Remove from heat & discard pandan leaf.



5. Quickly scoop and fill in pandan case with corn mixture and keep in fridge to chill till set.
