Mini Dutch Baby Pancake with tangy lemon curd, garnished with mango cubes and caramel popcorn. It's such an easy dish to make. So delicious 😋.
Ingredients : (Makes 2pcs x 12cm pan)
1 Egg
1/4 cup Milk
50g All Purpose Flour
1 tbsp Sugar
1/4 tsp Salt
1 tbsp Butter
few drops Vanilla Essence
Icing Sugar for dusting
Garnishing - lemon curd, mango cubes, caramel popcorns, etc

Method:
(Note that the batter is enough for making 2 pcs using my 12cm mini pan. If you have a larger pan, you can pour all the batter at once. Or double up the above recipe for extra portion.)
1. Put cast iron pan in oven, heat up to 210C.
2. In the meantime, beat the eggs with salt & sugar. Sift in flour and mix till well combined. Rest aside for 10 mins.
3. When oven heats up, removed the pan, add in half of the butter (I use straight from fridge, no need to melt it as the pan is hot enough to melt it immediately). Give a quick swirl to even out the butter all around the pan)
4. Pour in half batter and immediately return back to oven & bake for 15 mins or until crisp sides and golden brown.
5. Remove pancakes to serve on plate or serve from the pan itself.
Repeat step 3 & 4 for remaining batter.
6. Garnish with lemon curd, mango cubes, caramel popcorns and dust with icing sugar.
