Matcha Coconut Leche Flan

Delicious matcha flavored flan. Simple and delicious. Never ever cross my mind that matcha flavor pairs so well with coconut milk. This recipe is egg-free, so it's vegan friendly.


Ingredients: (makes 4 ramekins - 75ml each)

Caramel:

3 tbsp Sugar

1 tbsp Water

1 1/2 tbsp Hot Water


Matcha Flan:

220ml Water

1 tsp Matcha Powder

1 tsp Agar-Agar Powder

2 drops Vanilla Extract

2 tsp Sugar

100ml S&P Coconut Milk

1 tsp Corn Starch


Step by Step:

1. Firstly, to make caramel sauce, heat up sugar and 1 tbsp water in a small pot. Using low heat to prevent burnt. Bring to boil till it turns amber color (light brown) and caramelized. Swirl the pot / stir to even out the liquid.

(Do not burn caramel into dark brown color, otherwise it will taste bitter)

2. Remove pot from the heat, quickly add 1 1/2 tbsp hot water. Becareful when hot water added in, the hot caramel may splash abit. Stir with a longer spoon to mix evenly.

3. Pour caramel into ramekins. Set aside to set, it will slightly harden.

4. Add water, matcha powder, agar-agar powder, vanilla extract, sugar into saucepan. Stir well to mix, make sure no lumpy powder floating on the surface.

5. Turn on heat and bring to a boil, stirring continuously. Make sure agar-agar powder fully dissolved.

6. Mix corn starch with coconut milk. Then pour into matcha mixture. When it starts to boil, turn of heat.

7. Sieve matcha mixture & remove any foam on the surface with a spoon. Pour mixture into easy-to-pour container like a jug or something similar.

8. Fill ramekins with mixture. Once cool down, transfer to fridge to set for about 4 hours.

9. Carefully flip the flan onto plate and serve chilled. Enjoy!
