Lychee & Acai Berry/Blue Pea Jelly

Love this dainty cute little jelly in shades of pink, purple and blue. Just simple jelly, but present in another shape, totally changes the mood.

Ingredients: (makes about 7 pcs)

(A) Lychee & Coconut Layer

25g Coconut Milk

50ml Water

50ml Lychee Syrup from canned lychee

1/2 tsp Agar-Agar Powder


(B) Acai Berry & Blue Pea Layer

90ml Water

60ml Lychee Syrup from canned lychee

1/2 tsp + a pinch of Agar-Agar Powder

1/8 tsp Acai Berry Powder

10pcs Butterfly Pea Flower (dried/ fresh)


You will need:

7 nos small cups

Some cling wrap

Some strings to tie


Method:

Prepare by layering cling wrap on each cups. Cut bigger pieces of cling wrap so that you will be able to wrap it up and tie around it without the jelly leaking out.


Coconut Milk Layer

Add water, lychee syrup & agar powder in a saucepan, bring to a boil and cook till agar-agar powder fully dissolved, whisking continuously. Add in coconut milk and continue to simmer for 1 minute. Turn of heat and cool down slightly. When your hands able to touch the pot, meaning its not burning hot anymore, the agar-agar is ready to pour into cups. (NOTE : too hot agar-agar mixture will burn the cling wrap)

Pour 1 1/2 tbsp into each cup and let it cool down slightly. Leave it a room temperature will do.


While waiting for it to set, prepare the acai-berry / blue pea layer.

Add water and agar-agar to saucepan, bring to a boil and cook till agar-agar powder fully dissolved, whisking continuously. Turn off heat and divide mixture into 2 separate jug/cup. One add with acai berry powder and mix till dissolved. Another one throw in the blue pea flowers and set aside. Cool down slightly before pouring into the cups.


When the coconut layer has set, add lychee.

Acai Berry (Pink color)

Scoop about 1.5 tbsp acai berry mixture into few cups. Grab all the edges of the cling wrap and tie it tight.

Blue Pea (blue color)

Squeeze the blue pea flower with a spoon and the color will comes out. Discard the flower. Scoop about 1.5 tbsp blue pea mixture into few cups. Grab all the edges of the cling wrap and tie it tight.

Mix both (purple color)

Combine both mixture from acai berry & blue pea flower. Scoop about 1.5 tbsp mixture into few cups. Grab all the edges of the cling wrap and tie it tight.

Hang up the jelly and let it set completely before transferring to chill in fridge. Chill for 3 hours before serving.
