Crispy Sugar Spring Roll (Popiah roll)

Easiest 3 ingredients CNY snacks. Super addictive with crunchy bites and lightly sweeten with icing sugar coating. Hassle-free deep frying process, no oil spattering at all.


I'm using the small pack of spring roll pastry. You can also use the bigger size pack, which yields bigger portion. Do adjust the icing sugar accordingly.

Ingredients :

1 pack Spring Roll Pastry (5"x5") small size

1 Whole Egg (beaten)

10-12 tsp Icing Sugar

Oil for frying


You will need:

1 chopstick (for rolling)

Scissors

Brush

Step by step:

1. Carefully separates each slices of pastry by pulling apart gently and not tearing it.

2. Take a piece of pastry, lay a chopstick at 1 end and begin to roll up.

3. Towards the end, brush a thin layer of beaten egg to seal off.

4. Repeat the same for the rest of the pastry.


5. Cut the spring roll into 5 short pieces.

6. Heat up oil in wok /pot. Use medium heat.


7. Once oil turns hot, put in the spring roll cuttings. Stirring continuously so as to make sure all sides evenly fried.


8. Fried till turns light golden brown. Remove and drain away excess oil.


9. Lay and spread them apart on kitchen towel to absorb excess oil while cooling down.


10. Once it has fully cool down, about 10-15 mins, transfer them to mixing bowl and add in icing sugar.

11. Gently gives a toss to make sure every pieces evenly coat with icing sugar.


12. Transfer to airtight container for storing.
