Peanut & Black-Eyed Beans Soup

A hearty simple soup to warm the souls. A yummy combinations, full of nutrients.

Peanut are rich source of vitamins, protein, fibre and antioxidant properties. It helps to promote healthy and glowing skins as it is rich in Vitamin E.

As for black eyed beans, it helps lower cholesterol, full of fibre, low fat, antioxidant, full of protein, good source of iron & potassium.

Often got feedback that why their peanut is not soft although boiling for many times. First of all, you need to buy the correct type of peanut. There are one type which is smaller in size, is normally use for frying like those you had in your nasi lemak. Another type is slightly bigger in size, that's is for boiling soup. If you buying from those stalls at the market, you can always ask the seller which type is suitable for boiling soup or porridge.

Once you get the right type of peanut, it's better to soak them overnight in the fridge. This way is to soften it and it cooks faster with shorter cooking time.

As usual, I love adding some chicken feet into my soup for that extra collagen. You can omit if you find them too gross to your liking.

Ingredients : (serves 3-4)

90g Peanut (soaked overnight)

80g Black-Eyed Beans (soaked 30 mins)

300g Pork ribs & Chicken Feet

5 pcs Red Dates (Big size) - pitted

1.2L Water

Salt to taste

Step by Step: 1. Blanch pork ribs in a pot of hot boiling water for about 5-7 mins to remove blood & impurities. Discard & rinse to clean.

2. Add in all the ingredients in a pot of water.

3. Bring to a boil.

4. Reduce heat & simmer for about 1 1/2 hour or till peanut & Black-eyed beans soften.

5. Ready to serve hot.
