Simple recipe to share. I find these so yummy & tasty with just a few ingredients. Do try it out if you are a fan of spicy dish.
Patin fish is a species of cat fish. It is low in calories and packed with lean protein, healthy fats, vitamins, and minerals.
While catfish isn't considered a type of fatty fish like salmon, it's still a good source of omega fatty acids which are good for your brain, heart, immune system and eyes.
You can also use other types of fish of your own preference, but typically more suitable with this taste will be threadfin (Ikan kurau in Malay), white pomfret, grouper, snapper, tilapia, etc.

Ingredients : (serves 2)
8 slices patin fish fillet
7 pcs dried chilli
5 slices ginger
1 Shallot - quartered
1 tsp Fermented salted Black bean (rinse in water)
1 tbsp Cooking oil
1 tsp light soy sauce
1 tsp sugar
1 tsp fish sauce
1/4 tsp dark soy sauce
Water (about 40-50ml) - depends how much sauce you like
1 tsp corn starch + add abit water (thickening)
Step by Step :
1. Cut dried chilli into 2cm length. Soak in water for about 20 mins till soften. Use a chopstick to stir vigorously to loosen the seeds. Transfer chilli into another bowl. Discard water & seeds.
2. Heat up wok with some oil. Saute ginger and shallot till fragrant.
3. Add dried chilli and fermented salted black beans and saute for 1 minute.
4. Add in fish fillet slices, water and all the other seasoning (except starch mixture).
5. Bring to boil and let it simmer for 4 minutes. Flip the fish slices to make sure it cooks evenly & absorbing the sauce flavour.
6. Thickens the sauce by adding starch mixture while stirring continously. Not necessarily to use all. Up to own personal preference on the sauce thickness.
7. Dish up & serve immediately.
