Hong Kong Chee Cheong Fun aka steamed rice noodle role. The original way of making this is by mixing rice flour batter, then pouring a thin layer of batter over the cheese cloth, lay flat on a steamer. Quick steamed for few minutes with fillings such as shrimp, pork, beef, vegetables, or other ingredients. Once done, it will be rolled up and seasoned with soy sauce.

Recently a hot topic in some cooking group, credit to Ms Annie Lim for sharing the cheat way of making HK Chee cheong fun using Vietnamese Rice Paper. I'm impressed with the outcome as it turns out as smooth like the real deal with a very slight chewy texture. I would say its pretty close to the HK style, giving the shorter time to cook & less hassle to prepare.

Best for a quick breakfast fix in the rushing mornings.
As the rice papers are pretty thin, you really need quite a few pieces to keep you full. I would suggest a good 1 person portion will need about 7-8 pieces. I added prawns as filling.
Ingredients :
7-8 pcs Vietnam Rice Paper
7-8 pcs Prawn medium size - deshell & cubed
Drinking Water for soaking rice paper
Some oil - to oil the plate
Spring onion - for garnishing
Sauce: (mix together)
2 tsp Light Soy Sauce
1 tsp Cooking Oil
1/2 tsp Brown Sugar
2 1/2 tsp Water
Marinade for prawns :
Dash of White Pepper
Pinch of Salt
Pinch of Sugar
Step by Step:
1. Clean prawns, cut into cubed, then marinade it with pepper, salt & sugar. Set aside.
2. Soak rice paper in a big plate of water for 1-2 mins till soften.
3. Prepare a plate for rolling the chee cheong fun (CCF) . Don't forget to brush the plate with some cooking oil before you lay the CCF for rolling.
4. Spread soaked rice paper wide & drop few pieces of prawns in the center. Roll it up. It's okay if it's messy.

5. Prepare another plate for steaming, brush plate with some oil. Arrange rolled rice paper. Try not to stack on top, arrange it side by side. Otherwise, it will stick together once cooked. Once all done, brush some oil on the surface of chee cheong fun.

6. Steam on rapid boiling water on medium heat for 5 mins.
7. Meanwhile, heat up sauce mixture in a small pan to dissolve the sugar. Alternatively, you can also put them in microwave for 50secs - 1 mins to heat up.
8. Drizzle sauce over cooked chee cheong fun. Garnish with some chopped spring onions.
9. Serve immediately.
